YUM!!! I don’t know about you, but eating my weight in fresh summer cherries still isn’t enough. I’m always looking for more ways to let these juicy little guys shine with their incredible rich flavor. And what better way to cool down and satisfy sweet cravings than swirling them into a creamy frozen dessert. Of course we aren’t throwing nutrition out the window though. This froyo is built on nutrient dense Greek yogurt and antioxidant rich cherries to fit right into your health focused diet! This recipe is developed to be as easy possible with no churning of any sort necessary, while packing in tons of deliciousness through a quick simmer to concentrate their dark, sweet cherry flavor. It also only uses 5 simple ingredients!

I’ll keep the text short so you can get to making this ASAP, but did want to leave you with the idea of trying this with other summer fruits too. Strawberries, blueberries, or peaches would all be pretty amazing in place of the cherries. Enough for now, enjoy!!

Black Cherry No Churn Frozen Yogurt

Makes about 3 cups froyo

2 cups (300g) black or dark colored cherries, halved and pitted

1 tsp. vanilla extract

pinch of salt

2 cups (460g) whole milk Greek yogurt

1/2 cup (155g) sweetened condensed milk

Place a loaf pan or other similar sized container in the freezer to chill.

Place cherries, vanilla and salt in a saucepot. Cover and heat over low heat to bring to a gentle simmer. Keep covered and let simmer for 10 minutes, stirring occasionally to prevent burning or sticking on the bottom. Transfer to a bowl and cool to room temperature or lower in the fridge or freezer for a few minutes.

In a large bowl, mix together the Greek yogurt, sweetened condensed milk, and 1 tbs. of liquid from the cherries. Add the cherries and the rest of their juices and fold into the yogurt mixture until about 75% mixed. Let there still be streaks and swirls of the cherry juice. Transfer to the chilled loaf pan or container and place in freezer. Let freeze all the way through for several hours, or overnight ideally.

When ready to enjoy, remove from the freezer and let sit at room temp for at least 10 minutes to slightly soften before digging in.

Notes: Frozen cherries can be used in place of fresh. Just cut them in half and continue with the same simmering process. Whole milk (5%) Greek yogurt is definitely encouraged for it’s awesome richness, but low fat (2%) Greek yogurt could be used in place for a slightly less rich frozen yogurt. Make sure to use sweetened condensed milk and not evaporated milk. Evaporated milk does not have the same sugar content that is needed to prevent the froyo from getting rock hard.
