Herby Feta Chicken Greek Salad
Fresh, crispy, crunchy, and flavor packed, this is my favorite way to make Greek salad! It’s built on the best produce summer has to offer and makes getting in those veggies a delicious experience. I like to add some grilled or seared chicken on top for some muscle building, high quality protein too.
The best part of this recipe is the herby feta dressing that coats everything in bright, amazing flavor. Usually Greek salad will have feta crumbled or sliced on top of everything. But, I like to add it into the dressing so every bite of this salad gives you some salty and funky feta this style of salad is so well known for highlighting.
Have this summery dish with energizing carbs like some crusty bread or fresh flat bread on the side. Or, toss some chickpeas into the salad itself! You can swap out the chicken for another protein of your choice like grilled fish or tofu. This is a great recipe for customizing based on your own preferences and nutrition needs. Hope you enjoy!
Herby Feta Chicken Greek Salad
Salad
4 cups (150g) lettuce, torn into bite size pieces
8 oz. (224g) grilled chicken, thinly sliced against the grain
1 medium tomato, large diced (about 3/4 cup or 120g)
1/2 cup (65g) cucumber, sliced or diced
1/4 cup (12g) red onion, thinly sliced
2 tbs. (10g) olives, thinly sliced (use kalamata or green like castelvetrano)
Makes 2 salads
Dressing
2 tbs. extra virgin olive oil
2 tbs. feta, crumbled
1-1/2 tbs. lemon juice
1 tsp. fresh dill, minced
1 small garlic clove, minced or grated
1/2 tsp. dijon mustard
1/8 tsp. fresh ground black pepper
Combine dressing ingredients together in a small bowl.
Combine salad ingredients in a large bowl and toss in dressing. Or, divide salad ingredients among serving bowls and top with the dressing individually.
Notes: This salad can be prepared ahead, just wait to add the dressing until it’s time to eat.
