White Peach Lime Granita

Sweet, sweet summer. With so many hours of daylight and such warm temperatures, I don’t know about you, but it’s hard for me to stay inside. That and moving and home renovations has kept me away from my usual recipe testing in my kitchen, so sorry I have been missing! (Although you can always catch me on Insta)

I am back with this super summery and refreshing recipe for you though! It features juicy, ripe summer peaches and zesty lime in a crazy easy and delicious treat perfect to have ready to go on a hot day. If you haven’t made granita before, you are about to love this, I promise. This frozen dessert couldn’t be easier. Just basically make a smoothie thing, pour into a shallow container, and scrape up the forming ice crystals every so often. That’s really all there is to it.

You may or may not have bought more peaches than you can eat before they are too too ripe. If so, this recipe takes some off your hands and transforms them into a fun, light, flavorful summer dessert. Or have some of this icy, crunchy granita with smooth rich Greek yogurt for a great snack pairing. It’s really great when you are sooooo hot and a plain piece of fruit just won’t do it. Plus, it makes it easy to get a little more vitamin packed fruit in your life with this recipe. Hope you enjoy!

White Peach Lime Granita

Makes about 4 cups

 

4 cups (550g or ~ 3 each) white peaches, diced

¼ cup (60ml) water

3 tbs. lime juice

1 tsp. lime zest

1.5 tbs. sugar

Pinch salt

 

Combine the water, lime juice, zest, sugar, and salt in a bowl. Let sit while you cut the peaches, stirring every so often to help the salt and sugar dissolve.

Blend the peaches with the lime mixture either with an immersion/hand blender in the bowl, or transfer to a food processor or blender to blend until smooth.

Pour into a baking dish about 9x9” (23x23cm) or equivalent in size. Mixture should be no more than 1” deep. Place in freezer and let chill for about 30 minutes. Remove and scrape all over with a fork to break up forming ice crystals. Return to the freezer and repeat this every 30 minutes 3-4 more times until completely frozen and full of small ice crystals.

Cover and store in freezer pretty much as long as you want.

Notes: You can definitely use regular peaches in place of the white and try lemon in place of the lime if you want. If you let the mixture sit too long in the freezer and it is too solid to scrape with the fork, let sit out at room temp a few minutes to soften.
